Ellagic Acid Treatment Improves Postharvest Quality of Tomato Fruits by Enhancing the Antioxidant Defense System

Ellagic acid (EA) is a bioactive polyphenol compound with numerous biological activities, such as anti-inflammatory, antiestrogenic, antioxidant, and anticancer activities. In this research, we investigated the effect of postharvest tomato fruits EA treatment. Our results showed that at 25°C for 20 days, compared to control group, weight loss rate, titratable acidity, soluble solid concentration treated 50 μM were lower. The content protein in EA-treated group was approximately 1.65 times higher than treatment greatly inhibited changes lycopene vitamin C content. Moreover, reduced malondialdehyde content, electrolyte leakage, production reactive oxygen species. Furthermore, upregulated expression antioxidant-related genes induced activities antioxidant enzyme. summary, our could retard senescence preserve quality characteristics harvested via enhancing responses.
